Endless Food Co, a start-up from Copenhagen, had been working to create an alternative to cocoa, an ingredient that has been facing challenges due to climate change. THIC, the startup’s ”non-chocolate” chocolate, could present a scalable solution with its main ingredient being `upcycled` brewer’s spent grain. Christian Bach, one of the founders, tells us more in an exclusive interview.
